Gluten Free Waffles with CoYo and Berries

Try these amazing gluten free (and dairy free if you use CoYo instead of yoghurt) they are really easy to make:

3-4 sweet potatoes
2-3 eggs
3/4 cup nut flour
1 tbs palm sugar
1 tsp cinnamon
Mixed berries
Maple syrup
Peel and spiralize the sweet potatoes.  Mix them into beaten egg and add nut flour
sugar, and cinnamon.
Grease a waffle iron with coconut oil and press the mixture into the waffle shapes.
When cooked serve with Maple syrup, fresh berries and CoYo or yoghurt.
