Mushroom Ragout with Courgette Noodles

We are well into Spring now and what better time to start getting into shape ready for putting on our summer clothes.

Using the Cuisique spiral slicer is a great way to make summer salads more interesting here is one of our favourite recipes from Maggie at

The Recipe:

2-3 courgettes spiralized using either of the julienne blades (the ones with ‘teeth’)

2 cups of chestnut mushrooms,wiped and sliced – set aside

Few sprigs of thyme leaves taken off the stem

Mushroom Gravy

1/3 cup olive oil

¾ cup mushrooms

½ stalk celery

1/3 cup water

1½ tsp cider vinegar

1 clove garlic

pinch salt


Blend everything together. Stir in the thyme and the sliced mushrooms and serve over the spiralized courgettes …YUM! Enjoy!
